What can I use instead of butter in vegan cookies?
Coconut oil, cocoa butter or a nut butter such as almond butter. Coconut oil makes shortcrust firmer than butter: chill the dough well and let it soften for a few minutes before you roll it out. Cocoa butter gives Heidesand (brown butter shortbread) and Spritzgebäck (piped butter cookies) their crumbly bite.
How do I replace the egg in cookies?
In shortcrust, a little plant-based drink or water is often enough. For Lebkuchen and cookies, ground flaxseed or chia seeds soaked briefly in water bind the dough. For macaroons and the topping of cinnamon stars, aquafaba – the cooking water from chickpeas – is whipped until stiff like egg white.
Are vegan cookies honey-free?
Yes. Honey comes from bees, so it isn’t vegan. The recipes here are sweetened with maple syrup, date syrup, dates or coconut sugar – that’s still sugar, so enjoy the cookies in moderation.
Are there vegan cookies that are also gluten-free?
Yes, for example macaroons, cinnamon stars and crispy clusters with almonds or amaranth. You’ll find them above under ‘Gluten-free’. More gluten-free cookies, including ones with butter and egg, are in a separate collection.
