Zimtsterne (cinnamon stars) are made almost entirely from ground almonds or hazelnuts, egg white and cinnamon – they don’t need flour. Without refined sugar, you sweeten the dough with honey or coconut sugar, and the glaze works with stiffly whisked egg white and a little honey. Bake them only briefly at a low heat so the glaze stays white.
Roll the dough out between two sheets of baking paper and dip the cutter in cold water now and then. If the dough is too soft, chill it for 30 minutes.
Bake them for just 8 to 10 minutes at 160 °C (140 °C fan) and store them in a tin with a slice of apple.
