Air fryer baking: cookies, muffins and cakes

Baking in an air fryer is like baking in a small fan oven: set it about 20 °C lower than you would for the oven and expect a shorter baking time. Bake cookies in small batches on baking paper, muffins in silicone cases and cakes in an 18 cm springform tin or a small loaf tin. They’re sweetened with honey, maple syrup, dates or coconut sugar – that’s still sugar, so enjoy your bakes in moderation.

Frequently asked questions

Can I bake cookies in the air fryer?

Yes. Put the cookies on baking paper cut to the size of the basket and bake them in small batches at 130 to 160 °C for 6 to 9 minutes. Never put the paper into the hot basket on its own – the fan will suck it up.

What temperature do I need for cake in the air fryer?

Usually 140 to 160 °C, so about 20 °C lower than in the oven. If the top goes dark before the middle is cooked, turn it down by 10 °C and bake a little longer. A skewer test shows whether the cake is done.

Which tins fit in an air fryer?

Silicone muffin cases, a springform tin 16 to 18 cm across or a small loaf tin. Measure your basket first: leave a little space all round so the hot air can circulate.

Do I need to preheat the air fryer for baking?

For cookies and cakes it’s worth it: preheat for 3 minutes and the baking times will be right. Put the baking paper into the basket only once the dough is on it.
