Cakes with no refined sugar, made with honey and dates

You bake these cakes without white sugar: they’re sweetened with honey, maple syrup, dates or coconut sugar – that’s still sugar, so enjoy them in moderation. Here you’ll find German classics like marble cake, Bienenstich (bee sting cake), streusel cake, Donauwelle (Danube wave cake) and apple strudel, plus cheesecake, cakes with fresh fruit and no-bake cakes.

Frequently asked questions

What are the cakes sweetened with?

Honey, maple syrup, dates, date paste or coconut sugar; some only with ripe bananas or apples. Any chocolate in the batter is sweetened with dates. That’s still sugar – enjoy the cakes in moderation.

Can I replace the sugar in a cake with honey?

Yes, but use a little less, because honey is sweeter. As it’s runny, use a little less milk or water and bake 10 to 20 °C lower, or the cake will brown too quickly.

What does ‘no refined sugar’ mean here?

No white sugar, no icing sugar or cane sugar, and no glucose or agave syrup. Honey, maple syrup, coconut sugar and dates are allowed. You’ll find the nutrition per serving with every recipe.
