Vegan air fryer oat muffins with blueberries, banana, almond butter and cinnamon, sweetened with maple syrup. A breakfast to take with you, 206 kcal per muffin.
You’ll need: air fryer · muffin tin · blender
Bake six muffins without preheating the oven: the air fryer does it in a quarter of an hour. The banana brings sweetness and moistness, and the blueberries burst as they bake.
Almond butter → cashew butter (milder; contains tree nuts) or sunflower seed butter (nut-free). Blueberries → raspberries (more tart). Maple syrup → date syrup (more caramel-like). Chia seeds → ground linseed.
Six cases fit into a basket of 5 litres or more; otherwise bake in two batches. If they get too dark on top, lay a piece of baking paper loosely over them after 10 minutes.
Keeps for 3 days in a box, or 2 months frozen; to thaw, put them in the fridge overnight.
Contains almonds (tree nuts) and gluten (oats) unless the oats are labelled gluten-free. Suitable for children, and fine in pregnancy.
