  1. Core the apples and score the skin once all the way round horizontally.
  2. Finely chop the chestnuts and stoned dates and knead them with the cinnamon, soft butter and lemon juice. Fill the apples with the mixture.
  3. Place the apples in an ovenproof dish that fits in the basket and cook them in the air fryer at 180 °C for 16 to 18 minutes, until soft.
  4. Stir the vanilla and maple syrup into the skyr.
  5. Serve the baked apples warm with the vanilla skyr.

Good to know

Baked apples take 40 minutes in the oven; in the air fryer they're soft in 18. Chestnuts and dates replace the usual marzipan filling. Kids can fill the apples themselves.

Swaps

Chestnuts → walnuts or almonds (contain tree nuts). Dates → raisins. Skyr → natural yoghurt or oat yoghurt (vegan with coconut oil instead of butter; oats contain gluten). Maple syrup → honey.

Cooking tips

The cut in the skin stops it from bursting. Test with a wooden skewer: if it slides through easily, the apples are done.

Storage

Baked apples keep in the fridge for 2 days; reheat in the air fryer at 160 °C for 5 minutes.

Allergens

Contains milk; gluten-free, no egg or nuts (chestnuts aren't on the tree nut allergen list). If you swap in honey, not for babies under one.
