Replace sugar with honey, maple syrup, dates & co.
For 100 g of sugar, use about 80 g honey, 100 g maple syrup or 100 g coconut sugar. With honey and syrup, the dough needs a little less liquid and the oven should not be too hot. Honey does not work for crisp biscuits, meringue or caramel.

Instead of sugar
80 g honey
instead of 100 g sugar
Liquid in the recipe: 10 ml less (about 2 tsp)
No liquid in the recipe: add 5 g flour instead
Oven: no hotter than 175 °C, and bake a little longer
Bakes with honey brown faster and soften over time. For biscuits that should stay crisp, for meringue, macaroons, icing and caramel, it’s best not to use honey.
Butter and honey won’t cream as light and fluffy as with sugar. A little more baking powder helps: about 1 tsp per kg of flour.
Puddings and creams thickened with cornflour: cook the honey with them, do not stir it in afterwards – otherwise they turn runny again.

How the calculator works
Honey: 80 g per 100 g of sugar, because light honeys taste sweeter than sugar (Bavarian Bee Centre, Bosch). Honey is almost 20 % water. American recipes often use ¾ cup of honey per cup of sugar – about 125 g per 100 g of sugar by weight, and sweeter.
Maple syrup and coconut sugar: 1 : 1, here by weight (Maple from Canada, Apotheken Umschau). US producers use ¾ cup of syrup per cup of sugar, about 120 g per 100 g by weight (Vermont Maple).
Liquid: 15 % of the honey or syrup less, rounded to 5 ml. If the recipe has no liquid (shortcrust), add about 9 % flour instead (King Arthur Baking).
Oven: with honey no hotter than 175 °C (King Arthur), baking a little longer instead (Bavarian Bee Centre); with maple syrup about 15 °C lower (Vermont Maple: 25 °F).
Date paste 1 : 1 and 3.5 bananas per 100 g of sugar are rough guides (Bosch): there are no fixed rules here.
Example: The recipe uses 250 g of sugar, and you use honey:
250 g × 0.8 = 200 g honey
Liquid: 200 g × 0.15 = about 30 ml less
Good to know
A recipe hardly gets healthier this way: honey, maple syrup and coconut sugar are sugar too. The German Nutrition Society rates coconut sugar like table sugar.
Less sweetness is a good start: many recipes taste just as good with a quarter less.
With a new recipe, try a small batch first – one tray of biscuits, for example.
Frequently asked questions
How much honey instead of 100 g of sugar?
About 80 g honey. Light honeys taste sweeter than sugar. Use about 10 ml less liquid in the dough.
How much maple syrup instead of sugar?
About the same: 100 g maple syrup instead of 100 g of sugar. It is a little less sweet; American recipes use about 120 g by weight.
Can I swap sugar 1 : 1 for coconut sugar?
Yes. Bakes turn a little darker and less airy. For biscuits it is the easiest swap.
Which biscuits work with honey?
Gingerbread, honey cake and spiced biscuits that may be soft. Honey does not work for butter biscuits that should stay crisp, or for meringue and macaroons.
Why do bakes with honey turn darker?
Honey browns faster than sugar. So bake no hotter than 175 °C and cover large cakes with foil halfway through.
Is it healthier than sugar?
Hardly. Honey, maple syrup and coconut sugar are sugar too, and the German Nutrition Society rates coconut sugar like table sugar. Date paste and banana add some fibre.
