Convert fresh yeast to dried yeast
Dried yeast is about three times as strong as fresh yeast: 21 g of fresh yeast equals one 7 g sachet of fast-action dried yeast, 42 g equals two sachets. That raises about 500 g and 1 kg of flour.
That equals
14 g dried yeast
instead of 1 block(s) of fresh yeast (42 g)
Sachets of dried yeast (7 g): 2
Fresh yeast: 42 g
Enough for flour: 1,000 g
Mix fast-action dried yeast straight into the flour; dissolve fresh yeast in lukewarm liquid.
Lukewarm means about body temperature – too hot and the yeast dies.

How the calculator works
Fresh yeast : dried yeast = 3 : 1 by weight. A German block of fresh yeast is 42 g, a sachet of dried yeast 7 g.
Dr. Oetker: one 42 g block of fresh yeast raises up to 1 kg of flour, one sachet of dried yeast up to 500 g. King Arthur Baking also uses a third.
Flour: 500 g per sachet of dried yeast (= 21 g fresh yeast), rounded to 50 g. Blocks and sachets rounded to the nearest quarter.
Example: The recipe says 42 g of fresh yeast:
42 g ÷ 3 = 14 g dried yeast, so 2 sachets of 7 g
