Whole cuts of beef can be served pink: bacteria only sit on the outside (Food Standards Agency). In pregnancy, eat meat with no trace of pink (NHS) – at least 70 °C for 2 minutes, hotter than “well done” here.
Roast beef rises another 2 to 3 °C while resting: take it out a little early (Grillfürst).
Measure at the thickest part, to the centre, 2 to 3 cm away from bone and fat (Grillfürst).

How the calculator works
Doneness levels for beef, veal, lamb, venison and fish from the Grillfürst core temperature chart; leg of lamb slow-cooked until tender at 75 to 80 °C (Lecker).
Safety: meat and poultry at least 70 °C for 2 minutes (Food Standards Agency, BfR), venison 72 °C for 2 minutes (BfR) – so “well done” for venison is 72 °C. Fish: above 60 °C for 1 minute or frozen first (EFSA).
Poultry: turkey 80 °C in the thigh, 75 °C in the breast; chicken 80–85 °C (Grillfürst).
Resting: about 10 minutes, large joints 10 to 15 minutes (Dr. Oetker, Grillfürst).
Example: Roast beef, medium:
Target 55–59 °C in the centre, measured at the thickest part
Roast beef rises 2 to 3 °C while resting: so take it out at about 53 °C and rest it for 10–15 minutes
Good to know
A meat thermometer tells you for sure when it’s done. Every oven heats differently, and thickness matters more than weight (Grillfürst).
Always cook mince and rolled joints through: they can carry bacteria inside (Food Standards Agency).
Goose and duck have their own calculator with cooking time per kilo.
