Leave them to cool on the tray for 10 minutes.
Good to know
Chai is spiced black tea, and those very spices belong in Christmas baking. You grind the tea finely and knead it into the dough. The cookies taste of cinnamon, cardamom and a hint of pepper.
Swaps
Black tea → rooibos tea (caffeine-free). Coconut oil → butter (then no longer vegan). Almond butter → cashew butter. Spelt flour → plain flour.
Cooking tips
Grind the tea to a fine powder – coarse leaves taste bitter. If the dough is too crumbly, add a spoonful of oat milk.
Storage
Keeps for 3 weeks in a tin in a cool, dry place.
Allergens
Contains gluten (spelt) and almonds; vegan, no milk or egg. The black tea contains a little caffeine.
