Calories per cookie
A cookie from our recipes weighs 7.6 g to 13.8 g once baked. With BLS values, that means:
| Cookie | Weight | kcal | Sugar |
|---|---|---|---|
| Vanillekipferl (vanilla crescents) | 12.1 g | 66 | 3.3 g |
| Zimtsterne (cinnamon stars) | 9.8 g | 46 | 3.9 g |
| Spekulatius (speculoos) | 11.3 g | 55 | 2.2 g |
| Heidesand (sandy butter cookies) | 10.4 g | 54 | 3.4 g |
| Spritzgebäck (piped butter cookies) | 13.8 g | 68 | 2.4 g |
| Chequerboard cookies | 7.6 g | 35 | 2.3 g |
| Coconut macaroons | 9.1 g | 46 | 4.5 g |
Bigger cookies have more. How we get the cookie weight is explained under “How we calculated”.
Less sugar doesn’t mean fewer calories
Our cookie recipes are sweetened with honey, maple syrup or coconut sugar, and use less of it. For cookies of the same size, they have 42% less sugar – but 5% more calories.
| Cookie | kcal | Sugar |
|---|---|---|
| Vanillekipferl (vanilla crescents) | 66 → 66 | 3.3 g → 1.7 g |
| Zimtsterne (cinnamon stars) | 46 → 56 | 3.9 g → 2.2 g |
| Spekulatius (speculoos) | 55 → 53 | 2.2 g → 2.0 g |
| Heidesand (sandy butter cookies) | 54 → 57 | 3.4 g → 1.8 g |
| Spritzgebäck (piped butter cookies) | 68 → 67 | 2.4 g → 2.0 g |
| Chequerboard cookies | 35 → 37 | 2.3 g → 0.9 g |
| Coconut macaroons | 46 → 51 | 4.5 g → 2.1 g |
Cookie by cookie, our recipes have 10 to 62% less sugar. Calories range from 3% fewer to 22% more.
Sugar has 4 kcal per gram, fat has 9. Where there’s less sugar in the dough, there’s more butter, flour or nuts – so on average the calories barely change.
For us, sweetening with honey or maple syrup means less sugar and no refined sugar. Not fewer calories.
What about stollen?
Per 100 g, every stollen in the table has fewer calories than any of the butter and shortcrust cookies above – 413 kcal at most.
| Stollen | kcal | Sugar | Fat |
|---|---|---|---|
| Marzipan stollen | 413 | 27.7 g | 18.4 g |
| Poppy seed stollen (enriched yeast dough) | 392 | 18.7 g | 22.5 g |
| Dresden stollen | 388 | 34.0 g | 17.6 g |
| Quark stollen | 379 | 28.9 g | 15.7 g |
| Wholemeal stollen | 378 | 22.8 g | 18.2 g |
| Poppy seed stollen (yeast dough) | 329 | 14.1 g | 16.8 g |
How we calculated
- Cookies: every Christmas cookie listed in the German Nutrient Database (BLS) 4.0 by the Max Rubner Institute, in its basic form. The SmarTasty app uses the same values.
- Left out: versions with a chocolate coating or a nougat or cream filling (unless that is the only form, as for Dominosteine, Liegnitzer Bomben and chocolate nut Printen), everyday biscuits with no Christmas link, gluten-free and low-protein specialities, and anything with more than 0.5 g of alcohol per 100 g.
- Values per 100 g edible portion, baked, as calculated in the BLS. Energy uses EU conversion factors; sugar = all sugars, including from honey, syrup and fruit. Rounded.
- Cookie weight: from our recipes, dough divided by the number of cookies in the recipe. We weigh raw, the BLS measures baked. So we take out the water that evaporates during baking: our cookie then holds as much water as the BLS cookie.
- Comparison: traditional = BLS value × cookie weight. Our recipe = nutrition on the recipe page divided by cookies per serving, calculated from the ingredients with BLS values.
- The comparison only includes cookies with both: a BLS entry and a SmarTasty recipe for the same cookie that states the cookie count. That’s 7 cookies. Percentages = total across all 7 pairs.
- Values per cookie are estimates: homemade cookies vary with the recipe and size.
