In autumn, squash, mushrooms, apples, pears, cabbage, beetroot and chestnuts are in season – local, cheap and full of flavour. Here you’ll find soups, oven dishes, salads and warm breakfasts with them, all without refined sugar. For more ideas, see our squash recipes and healthy soups.
From September to November, mainly squash, cabbage (red cabbage, kale, Brussels sprouts, savoy), beetroot, parsnips and mushrooms, plus apples, pears and plums. Chestnuts arrive from October.
Soups, stews and curries with squash or lentils keep for 2 to 3 days in the fridge in a sealed container, and they freeze well in portions.
