Ingredients

Method

You’ll need: casserole dish · chopping board · knife · grater

  1. Cook the green spelt in the vegetable stock, covered, for 25 minutes, until soft and the stock has been absorbed.
  2. Remove 8 large leaves from the savoy cabbage, shave the thick central rib flat and blanch the leaves in salted water for 2 minutes. Refresh in cold water.
  3. Crumble the smoked tofu, finely dice the onion and grate the Alpine cheese. Mix everything with the green spelt, egg, mustard, marjoram and pepper.
  4. Divide the filling between the cabbage leaves, fold in the sides and roll them up tightly.
  5. Brown the rolls all over in the olive oil in a casserole dish, add the passata, crushed garlic and paprika and braise everything, covered, over a low heat for 25 minutes.
  6. Serve two rolls per person with plenty of tomato sauce.

Good to know

Cabbage rolls are winter food as it should be: hearty, warming and easy to prepare ahead. Green spelt and smoked tofu bring bite and a smoky aroma to the filling.

Swaps

Green spelt → buckwheat (gluten-free). Smoked tofu → beef mince (with meat). Alpine cheese → vegetarian hard cheese (Parmesan-style). Savoy cabbage → white cabbage (classic cabbage rolls).

Cooking tips

Shaving the central ribs flat stops the leaves from breaking when you roll them. Tied with kitchen string, the rolls hold together securely while browning.
