Method

You’ll need: frying pan · chopping board · knife

  1. Cut the sirloin steak across the grain into thin strips.
  2. Clean the mushrooms with a brush or a little kitchen paper and cut them into even slices.
  3. Peel the onion, cut it into strips and fry it with the mushrooms in 1 tbsp ghee over a high heat until they take on colour.
  4. Take out the veg, add the second tablespoon of ghee to the pan and sear the meat over a high heat for just 2 min.
  5. Return the mushroom mixture, sprinkle over the thyme, toss everything briefly and serve straight away.

Good to know

Steak and mushrooms go brilliantly together. Seared hot in ghee, they make a hearty meal in just a few minutes.

Swaps

Sirloin steak → chicken breast (leaner, fry for less time).

Cooking tips

Never wash mushrooms under running water. They soak it up like a sponge straight away and turn rubbery when fried.

Storage

Mushroom dishes reheat without any problem. Cool the dish quickly, though, and get it into the fridge fast.

Allergens

Contains milk (ghee). Ghee is clarified butter and contains only traces of lactose. Gluten-free and nut-free.
