Method

You’ll need: chopping board · knife · mixing bowl · grater

  1. Stir the low-fat quark in a large bowl with a splash of almond milk or water until creamy.
  2. Wash the apple, core it and coarsely grate it, skin and all, into a second bowl.
  3. Fold the grated apple and cinnamon into the quark and mix everything well.
  4. Roughly chop the walnuts or break them into small pieces with your fingers.
  5. Spoon the quark into a small bowl and scatter the walnuts over just before serving.

Good to know

This dessert tastes almost as good as your grandma's apple strudel, but brings several times as much protein – handy for your daily goals.

Swaps

Low-fat quark → soya quark alternative (to make the protein in the whole dish 100 per cent plant-based).

Cooking tips

Let the grated apple sit with the cinnamon for five minutes before mixing it into the quark, so the flavour intensifies.

Storage

Stir the grated apple straight into the quark, otherwise it oxidises in the air and turns an unappealing brown.

Allergens

Contains milk and tree nuts (walnuts, almonds in the almond milk). Gluten-free.
