  1. Slice the mushrooms and dice the onion. Fry both in the olive oil in a frying pan for 5 minutes and season with cumin, paprika and salt.
  2. Rinse the kidney beans, mash them roughly and mix with the mushrooms and a little lime juice.
  3. Spread the filling over one half of each tortilla, sprinkle with grated cheddar and fold them over.
  4. Place the quesadillas in the basket and cook in the air fryer at 190 °C for 8 minutes. Turn them after 4 minutes.
  5. Mix the yoghurt with grated lime zest. Cut the quesadillas into pieces and serve with the dip and chopped coriander.

Good to know

Quesadillas in a frying pan need patience and a spatula. In the air fryer, they turn crisp on both sides at once, while the cheddar melts inside. Mushrooms and beans make them autumnal and hearty.

Swaps

Cheddar → Alpine cheese such as Gruyère, or Gouda. Kidney beans → black beans. Mushrooms → king oyster mushrooms. Natural yoghurt → soured cream.

Cooking tips

Place an ovenproof rack on top of the quesadillas so they don't flip open in the airflow. Let the filling cool a little first.
