Wash the apples, remove the cores and cut them into wedges or small pieces.
Put the oats in a saucepan with the oat milk and cinnamon. Warm everything over a medium heat, stirring regularly, until the porridge turns creamy.
At the same time, heat a small frying pan and add the apples with the maple syrup. Cook them briefly until soft and lightly caramelised.
Roughly chop the walnuts so they bring more bite and roasted flavour to the topping later.
Taste the porridge and stir in a little more oat milk if you like it looser.
Divide the hot apple and cinnamon porridge between bowls, top with the warm apples and garnish with the walnuts.
Good to know
A breakfast like this makes for an unhurried morning. Warm, soft and pleasantly sweet without being heavy.
Swaps
Oat milk → almond milk (often a little thinner, with a nutty flavour); Walnuts → almonds (more vitamin E, a slightly firmer bite); Maple syrup → date paste (adds a little fibre as well); Apples → pears (milder sweetness and just as good with warm porridge)
Allergens
Contains tree nuts (walnuts); if you have coeliac disease, the oats must be explicitly labelled gluten-free. In its usual form, the recipe is fine for children and during pregnancy.
