Fondue recipes: with stock, cheese and dips

In a fondue chinoise, meat, fish and veg cook in hot stock instead of fat – and at the end you drink the stock as a soup. A cheese fondue works without wine too, made with apple juice and lemon. Serve with skyr, quark or yoghurt dips and plenty of veg for dipping.

Frequently asked questions

Which stock should I use for fondue chinoise?

A well-flavoured vegetable, chicken or beef stock, seasoned with ginger, lemongrass or herbs. Keep it at a gentle simmer the whole time so the meat and fish cook through.

How much meat and fish do I need per person?

About 200 g meat or fish per person, a little less with plenty of veg.

Can I make cheese fondue without alcohol?

Yes. Use apple juice or stock with a splash of lemon juice instead of white wine – the acidity keeps the cheese smooth.
