Ingredients

Method

You’ll need: saucepan · fondue set · chopping board · knife · sieve · wooden spoon · ladle

  1. Slice the ginger and garlic and simmer them in the vegetable stock for 10 minutes. Stir in the miso paste, soy sauce and sesame oil, and from then on don't let the broth boil hard.
  2. Pat the tofu dry and cut it into 2 cm cubes.
  3. Slice the king oyster mushrooms, halve the mushrooms and divide the broccoli into florets. Cut the spring onions into pieces.
  4. Cook the soba noodles in water for 4 minutes, refresh them in cold water and drain.
  5. Pour the broth into the fondue pot and keep it hot over the burner. Cook the tofu and veg in fondue baskets for 3 to 5 minutes.
  6. At the end, add the noodles and spring onions to the broth and eat it as a soup.

Good to know

A broth fondue doesn't need meat if the broth has flavour. Miso and ginger make it savoury, and the tofu and mushrooms soak it up. At the end, what's left turns into a noodle soup.

Swaps

Tofu → smoked tofu (stronger flavour). Soba noodles → rice noodles (gluten-free with tamari instead of soy sauce and a gluten-free miso). Broccoli → pak choi. King oyster mushrooms → shiitake.

Cooking tips

Only add the miso to hot broth that's no longer boiling, so the flavour is kept. Firm tofu won't fall apart in the fondue baskets.

Storage

The miso broth keeps for 3 days in the fridge; cut tofu, covered with water, for 2 days.

Allergens

Contains soya, gluten (soy sauce, soba noodles with wheat) and sesame; vegan, no milk, egg or nuts. Suitable for children and in pregnancy.
