Ingredients

Method

You’ll need: chopping board · knife · grater

  1. Peel and core the apple and grate it finely. Mix it with the lemon juice straight away.
  2. Stir the low-fat quark and soured cream together until smooth.
  3. Stir in the apple and horseradish and season with salt and pepper.
  4. Finely snip the chives and fold them in.
  5. Chill the dip until you're ready to eat, then serve it with fondue or raclette.

Good to know

Horseradish belongs with fondue chinoise (meat cooked at the table in hot stock) as much as the stock does. Grated apple makes it rounder and less sharp. The quark keeps the dip fresh, and a little soured cream makes it creamy.

Swaps

Soured cream → skyr (also provides protein). Apple → pear. Horseradish from a jar → freshly grated horseradish (hotter, so use less). Chives → dill.

Cooking tips

Stir the lemon juice into the apple straight away, or it will turn brown. After 30 minutes in the fridge, the flavours come together.

Storage

Keeps covered in the fridge for 2 days.

Allergens

Contains milk; gluten-free, no egg or nuts. For children, make it milder with less horseradish; suitable in pregnancy.
