Ingredients

Method

You’ll need: saucepan · fondue set · chopping board · knife · ladle

  1. Bruise the lemongrass stalks with the back of a knife and halve them. Slice the ginger and garlic and simmer everything with the chicken stock and soy sauce for 15 minutes.
  2. Cut the chicken breast across into thin slices and keep it in the fridge until you're ready to eat.
  3. Slice the shiitake and carrots, and cut the pak choi and spring onions into pieces. Pour hot water over the rice noodles and leave them to soak for 5 minutes.
  4. Pour the stock into the fondue pot and keep it at a simmer on the fondue burner.
  5. Cook the meat and veg in fondue strainers in the stock. The chicken needs 3 to 4 minutes, until it's no longer pink inside.
  6. Finally, add the rice noodles, lime juice and chopped coriander to the stock and eat it as a soup.

Good to know

In Asia, fondue chinoise is called hot pot: everyone sits around a pot of well-seasoned stock and cooks their own food. This stock tastes of lemongrass and ginger. At the end, the noodles turn it into a soup.

Swaps

Chicken breast → rump steak (cooked through in pregnancy) or prawns. Soy sauce → tamari (gluten-free). Pak choi → Chinese leaf. Rice noodles → glass noodles.

Cooking tips

Put the chicken in the freezer for 15 minutes so you can slice it wafer-thin. Give everyone their own fondue strainers so raw meat doesn't come into contact with cooked food.

Storage

Leftover stock keeps in the fridge for 3 days and can be frozen for 3 months.

Allergens

Contains soya and gluten (soy sauce); no milk, egg or nuts. In pregnancy, cook the chicken right through and keep raw meat separate.
