Mediterranean fish fondue with salmon, prawns and fennel
Mediterranean fish fondue: salmon, cod and prawns cook in fish stock with fennel, lemon and thyme, served with veg and baby potatoes. A dinner with 46 g protein.
Cut the fennel into thin strips and slice the garlic. Grate the lemon zest and simmer everything with the fish stock, olive oil, thyme and bay leaf for 15 minutes.
Boil the baby potatoes in their skins in salted water for 15 minutes until cooked.
Cut the salmon and cod into 3 cm cubes, rinse the prawns and pat everything dry. Keep the fish in the fridge until you eat.
Cut the courgette and pepper into bite-sized pieces. Pour the broth into the fondue pot and keep it simmering on the burner.
Cook the fish and prawns in fondue baskets for 2 to 3 minutes, and the veg for 3 to 4 minutes. Drizzle everything with lemon juice.
Eat the baby potatoes alongside and drink the broth from cups at the end.
Good to know
Fish cooks in two or three minutes in a fondue and stays moist. The broth with fennel, lemon and thyme tastes of the Mediterranean. By the end, it's so good you'll drink it from a cup.
Swaps
Cod → coley or zander. Prawns → scallops (contain molluscs; in pregnancy, cook them right through too). Fish stock → vegetable stock. Baby potatoes → baguette (then not gluten-free).
Cooking tips
Use firm-fleshed fish and don't cut it smaller than 3 cm, or it will fall apart in the broth. Fondue baskets work better for fish than forks.
