Ingredients

Method

You’ll need: blender · chopping board · knife · sieve

  1. Wash the pineapple, ginger and mint thoroughly. Cut the pineapple into rough pieces and peel the ginger if needed.
  2. Put the pineapple into a blender with the ginger, mint and a squeeze of lemon juice. Blend everything until the juice is smooth and aromatic.
  3. If the juice is too thick for you, pass it briefly through a fine sieve. This makes it smoother and thinner.
  4. Taste the juice and balance it with a little more lemon juice if needed. The fruity sweetness and the heat of the ginger should complement each other.
  5. For a colder result, chill the juice briefly before serving. It tastes liveliest when fresh.

Good to know

Fruity, fresh and with a gentle heat – a juice like this wakes up your taste buds straight away. I especially like it when I want something refreshing in my glass that still has character.

Swaps

Mint → basil (also provides aromatic plant compounds) | lemon → lime (similarly fresh, with vitamin C) | pineapple → mango (contains beta-carotene, creamier texture) | ginger → turmeric (contains curcumin)

Allergens

The recipe is naturally vegan and free from the most common allergens. Ginger can taste quite hot to young children; in pregnancy, normal kitchen amounts are usual – if you're sensitive to ginger, simply use less.
