Ingredients

Method

You’ll need: chopping board · knife

  1. Gently melt the coconut oil and stir it with the cocoa powder and honey to a smooth chocolate mixture.
  2. Mix the oats with most of the chocolate mixture until everything is well coated. Press the mixture evenly into a tin.
  3. Stir the yoghurt with the rest of the honey to a smooth cream. Gently fold in the raspberries so they keep some texture.
  4. Spread the yoghurt and raspberry cream over the oat base and smooth the top. Finally, add the rest of the chocolate on top.
  5. Put the tin in the freezer until the mixture is firm. Then cut everything into bars.
  6. To serve: let the bars soften briefly before eating and serve them well chilled.

Good to know

These bars are cool, creamy and pleasantly chocolatey. Just right when you want something sweet that's still nicely satisfying.

Swaps

Yoghurt → skyr (more protein per serving). Honey → date paste (also adds fibre). Raspberries → blueberries (milder in flavour, also with fibre). Coconut oil → ghee (a different fat).

Allergens

Contains dairy and oats (gluten unless certified gluten-free); usually suitable for children, though keep the honey in mind for little ones, and during pregnancy pasteurised dairy products are the safe choice. Contains: gluten (oats).
