Ingredients

Method

You’ll need: frying pan · saucepan · chopping board · knife · wooden spoon · whisk

  1. Take the skyr and Greek yoghurt out of the fridge 30 minutes before cooking and stir them together until smooth.
  2. Split the vanilla pod and scrape out the seeds. Stir the milk, agar agar, vanilla seeds and 40 g of the honey together in a pan.
  3. Boil the milk hard for 2 minutes, stirring. Take it off the heat, wait 2 minutes, then quickly whisk it into the yoghurt mixture.
  4. Pour the cream into four glasses and chill for 2 hours until set.
  5. Quarter the figs and fry them in a frying pan with the remaining honey for 2 to 3 minutes until glossy. Roughly chop the walnuts.
  6. Arrange the figs and walnuts on the panna cotta and serve.

Good to know

Panna cotta means cooked cream, but this one does without the cream. Skyr and yoghurt make it fresh and slightly tangy, and the honey figs bring autumn to the glass.

Swaps

Figs → pears or plums. Walnuts → pistachios. Honey → maple syrup. Greek yoghurt → natural yoghurt (softer set).

Cooking tips

Agar agar has to boil hard, or it won't set. If the yoghurt is too cold, the mixture sets in lumps as you stir it in, so take it out of the fridge in advance.

Storage

Without the figs, it keeps covered in the fridge for 3 days.

Allergens

Contains milk and walnuts; gluten-free, no egg. Fine for children and in pregnancy; no honey for babies under one year old.
