Ingredients
1 cauliflower
250 g chickpeas
400 ml coconut milk
150 ml vegetable stock
1 onion
2 cloves of garlic
1 tbsp coconut oil
1 dash of mango chutney (without added sugar, or homemade)
Break the cauliflower into small florets. Finely dice the onion and crush the garlic.
Heat the coconut oil in a wide pan and soften the onion and garlic over a medium heat until translucent, without letting them colour.
Add the curry powder and turmeric and toast briefly until the spices are fragrant. Stir in the chickpeas and cauliflower and coat everything well with the spices.
Pour in the coconut milk and vegetable stock, cover and simmer the curry gently until the cauliflower is soft but still has a little bite.
Season to taste with salt and round off with a little mango chutney if you like. Leave to stand briefly so the flavours come together.
Serve with fresh coriander. Rice goes well with it if you want it a little more filling.
Good to know
A curry like this quickly makes your head feel quieter. It's warm, creamy and just right for days when you want things simple but still really good.
Swaps
Cauliflower → broccoli (more vitamin C and folate) | Chickpeas → white beans (milder flavour, also provide fibre) | Mango chutney → finely diced mango with a little lime juice (no refined sugar, fresh flavour)
Allergens
The curry is naturally dairy-free as long as you don't use ghee; coconut can be relevant, chickpeas can cause wind if you have a sensitive stomach, and for children and during pregnancy, mild seasoning is usually the better choice.
