Ingredients
2 wild salmon fillets (about 150g each)
1 avocado
½ cucumber
120 g wild rice (uncooked weight)
1 tbsp mayonnaise (made with avocado or olive oil, no seed oils)
1 tbsp olive oil
salt
pepper
2 tbsp soy sauce
1 splash of sriracha (without added sugar)
Method
You’ll need: frying pan · chopping board · knife
Rinse the wild rice thoroughly and cook it according to the packet instructions until soft but still with a little bite. Then let it steam off briefly.
Pat the wild salmon dry, season with salt and pepper and cook it in a frying pan with the olive oil over a medium heat until lightly browned on the outside and juicy inside.
Wash the cucumber and cut it into thin slices or small cubes. Halve and stone the avocado, scoop out the flesh and cut it into slices or chunks.
For the dressing, stir the mayonnaise with the soy sauce and a small splash of sriracha. Season to taste with a little pepper.
Divide the cooked wild rice between bowls and arrange the cucumber, avocado and the wild salmon, flaked or left whole, on top.
To serve, spoon the dressing over the bowl and enjoy straight away. Add a little extra soy sauce or sriracha, if you like.
