Warm lentil and sweet potato salad
Warm lentil and sweet potato salad with Puy lentils, sweet potato, rocket, goat's cheese and a honey mustard dressing – savoury, balanced and quick to make.
Rinse the Puy lentils thoroughly and cook in salted water until al dente. Then drain and let the steam escape briefly.
Peel and dice the sweet potato and roast with olive oil in the oven at 200 °C (180 °C fan) for 25–30 min until soft and browned at the edges.
For the dressing, stir the mustard, honey, olive oil and lemon juice until smooth. Season to taste with a little salt and pepper.
In a large bowl, toss the warm lentils and roasted sweet potato with the dressing. Gently fold in the rocket.
Cut the goat's cheese into pieces or crumble it over the top so it melts slightly and spreads through the salad.
Serve warm. If you like, finish with a little freshly ground pepper and a few drops of olive oil.
Good to know
A salad like this feels like a proper meal. Warm, hearty and still fresh. I especially like it on days when things should be easy but not boring.
Swaps
Goat's cheese → sheep's milk feta (also provides protein, often a little stronger in flavour; pasteurised in pregnancy). Puy lentils → beluga lentils (similar fibre content, hold their shape). Honey → date paste (no refined sugar, also contains a little potassium). Rocket → baby spinach (milder, also provides folate and vitamin K).
Allergens
Contains milk (goat's cheese) and mustard. Well suited to children if you swap the rocket for milder leaves if needed; no honey for babies under one year old. In pregnancy, use pasteurised goat's cheese without a rind – rinded goat's cheese only when heated until steaming hot.
