Ingredients
- 300g Greek yoghurt
- 4 tbsp rolled oats
- 1 tbsp honey
- 150g mixed berries
- 1 tbsp chia seeds
Method
You’ll need: frying pan · mixing bowl
- Put the mixed berries (fresh or thawed) in a bowl with the chia seeds and crush everything lightly with a fork.
- Leave the mixture to rest for 5 min so the chia seeds soak up the juice and you get a quick compote.
- Stir the honey into the Greek yoghurt until evenly mixed.
- Toast the oats briefly in a dry non-stick frying pan until lightly fragrant, then leave them to cool.
- Layer the berry compote, yoghurt and oats alternately in two tall dessert glasses and serve straight away.
Good to know
Three simple layers that make up everything a good dessert needs: creaminess, fruity tartness and a crispy crunch.
Swaps
Oats → chopped almonds (for even fewer carbs and to add some extra fats to the parfait).
Cooking tips
To layer it neatly, you can put the yoghurt in a piping bag or a freezer bag with one corner snipped off.
Storage
The parfait goes soft quite quickly. If you make it ahead, add the oats on top only at the very last second before serving.
Allergens
Contains milk and gluten (oats). Completely nut-free.
