Vegetarian tomato and bean cassoulet with herb crust
Vegetarian tomato and bean cassoulet with herb crust: a hearty oven classic with beans, chopped tomatoes, garlic, thyme, parsley and crisp breadcrumbs.
Drain and rinse the beans. Finely chop the onion, garlic and parsley.
Heat the olive oil in an ovenproof frying pan or a wide saucepan. Gently fry the onion and garlic until translucent, then add the tomato purée and toast briefly.
Stir in the chopped tomatoes, beans and thyme. Simmer everything gently for a few minutes and season to taste with salt and pepper.
Mix the butter with the breadcrumbs and parsley until you have a loose herb crust. Spread the mixture evenly over the beans.
Bake the cassoulet in the oven at 200 °C (180 °C fan) for 15–20 min until the top is golden brown and crisp. Leave to rest briefly so the flavours settle.
Serve hot, ideally straight from the dish. A green salad or some toasted sourdough bread goes well with it.
