Ingredients
200g wholemeal spelt flour
100g ground almonds
80g raisins
100g skyr
110g butter
70g coconut sugar
40g honey
1 egg
1 tsp baking powder
1 tsp stollen spice
1 pinch of salt
Method
You’ll need: oven · baking tray
Knead the ground almonds with the honey into a firm paste and shape it into 40 small balls.
Mix the wholemeal spelt flour, baking powder, two thirds of the coconut sugar, the stollen spice and salt. Add the skyr, egg and three quarters of the butter in cold pieces and knead everything into a smooth dough. Knead in the raisins.
Divide the dough into 40 pieces, flatten each one, place an almond ball on top and shape it into a ball.
Bake the bites on a baking tray lined with baking paper in a preheated oven at 180 °C (160 °C fan) for 14 to 15 minutes.
Melt the rest of the butter, brush it over the warm pieces and roll them in the rest of the coconut sugar, finely ground.
Good to know
Stollen in bite size: here every mouthful gets its own almond centre. The bites bake faster than a whole stollen and are ideal for giving as gifts.
Swaps
Skyr → low-fat quark. Raisins → chopped dried apricots. Honey → maple syrup. Wholemeal spelt flour → half light spelt flour (paler).
Cooking tips
Work with cool dough – that makes the balls easier to shape. The almond paste firms up if you chill it for 10 minutes.
Storage
Keeps for 2 weeks in a tin somewhere cool.
Allergens
Contains gluten, milk, egg and almonds; honey is not suitable for children under one year old; fine during pregnancy.
