Method

You’ll need: oven

  1. Warm the milk until lukewarm, dissolve the yeast and honey in it and leave the mixture to stand for 5 minutes.
  2. Knead the spelt flour, salt, egg, yeast milk and half the butter for 5 minutes into a smooth dough. Cover and leave it to rise somewhere warm for 60 minutes until doubled in size.
  3. Roll the dough out on a floured surface into a 30 × 40 cm rectangle. Brush it with the rest of the butter and sprinkle the coconut sugar and cinnamon over it.
  4. Roll the dough up from the long side, cut 12 slices and place them in a tin lined with baking paper. Leave them to rise for 15 minutes.
  5. Bake the rolls in a preheated oven at 180 °C (160 °C fan) for 20 to 22 minutes, until golden brown.
  6. Let them cool for 10 minutes and serve them lukewarm.

Good to know

When cinnamon rolls are in the oven on an Advent Sunday, the whole home smells of Christmas. The spelt yeast dough is easy – it just needs a little time to rise.

Swaps

Coconut sugar → maple sugar. Spelt flour → half wholemeal spelt flour (nuttier). Milk → oat milk. Cinnamon → cardamom (Scandinavian-style).

Cooking tips

Cut the roll with a piece of dental floss so the rolls stay round. If they sit close together in the tin, the sides turn soft and moist.
