Ingredients

Method

You’ll need: hand mixer · chopping board · knife · mixing bowl · grater

  1. Put the ricotta in a mixing bowl and whisk with a hand mixer on the highest setting until creamy.
  2. Slowly add the honey and orange zest to the mixture.
  3. Chop the pistachios fairly finely with a knife.
  4. Divide the cream between two shallow bowls.
  5. Sprinkle the chopped pistachios and a pinch of coarse sea salt over the cream before serving.

Good to know

Italian flair in just ten minutes. Whisked hard, this creamy cheese turns almost as airy as a cloud.

Swaps

Orange zest → lemon zest (lemon zest gives the sweet dessert an even fresher, slightly sharper tang).

Cooking tips

For the orange zest, be sure to use an unwaxed orange, and only grate off the outermost orange layer, otherwise it turns bitter.

Storage

The dessert collapses slightly after a few hours. So it's best to whip up the cream fresh, just before eating.

Allergens

Contains milk and tree nuts (pistachios). Gluten-free. Pregnancy: use pasteurised ricotta.
