Squash, goat's cheese and honey are a well-known trio from the oven. In the raclette pan, the cheese turns creamy and the walnuts toast along with it. Roast the squash briefly beforehand so it's soft.
Goat's cheese log → feta (saltier; pasteurised in pregnancy). Walnuts → pumpkin seeds (nut-free). Honey → maple syrup. Hokkaido squash → sweet potato.
Don't cut the squash wedges thicker than 1 cm, or they won't cook through in the pan. You can roast the squash the day before and keep it in the fridge.
Roasted squash keeps covered in the fridge for 3 days, and an opened goat's cheese log, wrapped, for 4 days.
Contains milk (goat's cheese – not dairy-free) and walnuts; gluten-free, no egg. Soft goat's cheese is often made from raw milk: in pregnancy, only use pasteurised cheese and heat it until steaming hot.
