Ingredients

Method

You’ll need: saucepan · raclette grill · chopping board · knife · sieve

  1. Boil the potatoes in their skins in salted water for 20 minutes until cooked and keep them warm, covered.
  2. Finely chop the garlic. Heat the olive oil, wilt the spinach with the garlic in it for 2 minutes and season with nutmeg, salt and pepper.
  3. Squeeze out the spinach in a sieve. Dice the tomatoes and slice the raclette cheese.
  4. Preheat the raclette grill for 10 minutes. Divide the spinach and tomatoes between the raclette pans, make a hollow in each and crack in an egg.
  5. Put a slice of cheese at the edge and cook the pans under the grill for 8 to 10 minutes until the egg white has set.
  6. Slide the contents onto the potatoes and eat straight away.

Good to know

An egg in a raclette pan is often the first thing to go. With spinach and tomatoes underneath, it becomes a dish of its own. Allow a little more time – the egg takes longer under the grill than cheese does.

Swaps

Leaf spinach → chard. Tomatoes → pepper. Raclette cheese → Alpine cheese (more flavour). Potatoes → wholegrain bread (contains gluten).

Cooking tips

Squeeze the spinach out well, or the egg will swim in water. If you like the yolk firm, prick it with a fork.

Storage

Cooked spinach keeps in the fridge for 1 day, raw eggs until their best-before date.

Allergens

Contains egg and milk; gluten-free, no nuts. In pregnancy, cook the egg until the yolk is firm and use raclette cheese made from pasteurised milk.
