  1. Grate the zest of the orange and squeeze out the juice.
  2. Stir together the oats, chia seeds, yoghurt, milk, orange juice, orange zest and honey.
  3. Divide the mixture between two jars, seal and leave in the fridge overnight, for at least 6 hours.
  4. Halve the pomegranate and tap the seeds out with a spoon over a bowl. Roughly chop the almonds.
  5. In the morning, scatter the pomegranate seeds and almonds over the oats.

Good to know

Pomegranates are in season in winter, and their seeds stay juicy in a jar for days. Orange juice and zest make the oats fruity. In the morning, all you do is tap out the seeds.

Swaps

Yoghurt → skyr (also provides protein). Milk → almond milk. Honey → maple syrup. Almonds → pistachios.

Cooking tips

Tap the halved pomegranate, cut side down, over a bowl of water. The seeds sink and the white membranes float to the top.

Storage

The oats keep for 3 days in the fridge, and the seeds, once removed, for 5 days in a container.

Allergens

Contains gluten (oats, unless labelled gluten-free), milk and almonds; no egg. Leave out the honey for children under one year old.
