Method

You’ll need: frying pan · saucepan · chopping board · knife · mixing bowl · wooden spoon

  1. Cook the floury potatoes in their skins in salted water for 20 to 25 minutes until soft. Peel them, press them through a potato ricer and let the mash steam dry for 10 minutes.
  2. Quickly knead the potato mixture with the spelt flour, spelt semolina, egg, a third of the butter and the salt into a smooth dough.
  3. Cut a slit in the side of each plum, remove the stone and fill each one with a little coconut sugar.
  4. Divide the dough into 8 portions, press them flat, put a plum on each and shape into round dumplings.
  5. Poach the dumplings in gently simmering salted water for 12 to 15 minutes until they rise to the surface.
  6. Toast the breadcrumbs in the remaining butter for 3 to 4 minutes until golden brown, stir in the cinnamon and the remaining coconut sugar and roll the dumplings in the crumbs.

Good to know

Plum dumplings are the dish you look forward to in late summer. Potato dough and buttery crumbs on the outside, a warm, soft plum inside.

Swaps

Spelt flour → plain flour. Coconut sugar → maple syrup in the crumbs. Breadcrumbs → ground hazelnuts (nuttier; contains tree nuts). Plums → apricots in summer.

Cooking tips

Make a test dumpling first: if it falls apart, knead another 1 to 2 tbsp of flour into the dough. The water should only simmer, never bubble hard.

Storage

Uncooked dumplings can be open-frozen on a tray and kept in the freezer for 2 months; cook them from frozen in about 20 minutes.

Allergens

Contains gluten, milk and egg; no nuts. Suitable for children and in pregnancy.
