Ingredients

Method

You’ll need: frying pan · chopping board · knife

  1. Put the unsalted pistachios on a board and roughly chop them with a large knife.
  2. Toast the pistachios in a dry frying pan for 2 min until fragrant, then leave to cool.
  3. Stir the Greek yoghurt with the honey and a pinch of ground cardamom.
  4. Layer the yoghurt cream and the toasted pistachios alternately in two tall dessert glasses.
  5. Chill the parfait in the fridge for half an hour before serving so the cardamom can infuse.

Good to know

Greek yoghurt, honey and nuts are a true classic of Mediterranean cooking. But the cardamom takes this dessert to a whole new level.

Swaps

Honey → maple syrup (for a slightly caramel note that goes beautifully with the toasted pistachio flavour).

Cooking tips

Keep a very close eye on the pistachios while toasting. Because they're green, it's hard to see how brown they're getting, and they burn easily.

Storage

Once layered, the pistachios slowly soften in the fridge. For the best crunch, it's best to make the dessert just before serving.

Allergens

Contains milk and tree nuts (pistachios). Completely gluten-free.
