  1. Preheat the oven to 220 °C (200 °C fan). Halve the potatoes, trim and halve the Brussels sprouts, cut the carrots and mushrooms into pieces and the onion into wedges.
  2. Toss the veg with the olive oil, paprika, thyme, salt and pepper and spread it out on a baking tray lined with baking paper.
  3. Roast the veg for 25 to 30 minutes, turning it halfway through.
  4. Lay the slices of raclette cheese on top and bake everything for another 5 minutes, until the cheese has melted.
  5. Divide the roasted veg and cheese between four plates and serve with the lamb's lettuce.

Good to know

Raclette without the crush around the little pans: everything goes on one tray, and the cheese melts on top at the end. That leaves you time for your guests on New Year's Eve.

Swaps

Raclette cheese → Alpine cheese (such as Gruyère). Brussels sprouts → broccoli. Mushrooms → king oyster mushrooms. Potatoes → sweet potatoes (shorter baking time).

Cooking tips

Lay the veg cut side down on the tray so it browns better. Grind the pepper fresh over the top at the table.

Storage

The roasted veg keeps for 3 days in the fridge without the cheese.

Allergens

Contains milk; no gluten, egg or nuts; fine for kids. In pregnancy, use raclette cheese made from pasteurised milk and melt it until piping hot.
