Ingredients

Method

You’ll need: frying pan · chopping board · knife · spatula

  1. Cut the white cabbage into fine strips and the spring onions into rings. Set aside 2 tbsp of the green parts.
  2. Whisk the eggs and vegetable stock, stir in the spelt flour and mix in the cabbage and spring onions.
  3. Heat half the olive oil in a non-stick frying pan. Add half the batter, press it into a round about 2 cm thick and fry it over a medium heat for 5 to 6 minutes.
  4. Turn the pancake with the help of a plate and fry it for another 5 minutes. Fry the second pancake the same way, 5 minutes per side.
  5. Stir the tomato purée, soy sauce, honey, cider vinegar and water into a sauce. Stir the natural yoghurt with the mustard.
  6. Brush the pancakes with the sauce, drizzle stripes of mustard yoghurt over them and scatter over the crumbled nori, sesame seeds and spring onion greens.

Good to know

Okonomiyaki is mostly cabbage – the batter just holds it together. The pancake turns golden brown on the outside while the cabbage stays juicy inside. On top go sauce, yoghurt and nori, just like in Osaka.

Swaps

White cabbage → sweetheart cabbage (more delicate). Spelt flour → buckwheat flour (gluten-free with tamari instead of soy sauce). Natural yoghurt → shop-bought mayonnaise made with olive oil (in pregnancy, no homemade mayo with raw egg). Nori → chives.

Cooking tips

The finer the cabbage strips, the better they cook through in the pan. To turn the pancake, put a plate over the pan, flip it over and slide the pancake back in.

Storage

Leftovers keep for 1 day in the fridge and turn warm and crisp again in a frying pan.

Allergens

Contains gluten, egg, milk, soya, mustard and sesame; no nuts. Suitable for children and in pregnancy; no honey for babies under one year old.
