Vegetarian Lebkuchen tiramisu with honey and quark
Vegetarian Lebkuchen tiramisu with a spelt gingerbread sponge, espresso and a cream of low-fat quark, mascarpone and honey. Festive desserts, 312 kcal per serving.
Make the espresso and leave it to cool. Whisk the eggs with a quarter of the honey for 5 minutes until pale and thick.
Sift the spelt flour and gingerbread spice over the top and fold both in. Spread the mixture on a baking tray lined with baking paper into a 25 by 30 cm rectangle.
Bake the sponge in a preheated oven at 180 °C (160 °C fan) for 8 to 10 minutes and leave it to cool for 10 minutes.
Whisk the low-fat quark, mascarpone, remaining honey and grated orange zest into a smooth cream.
Cut the sponge to fit a 20 by 20 cm dish, soak it with the espresso and layer it alternately with the cream. Finish with a layer of cream.
Chill the tiramisu for at least 2 hours and dust it with cocoa before serving.
