  1. Melt the butter and honey over a low heat and let the mixture cool until lukewarm.
  2. Peel the ginger and grate it finely. Stir it into the honey butter with the egg.
  3. Mix the spelt flour, ground ginger, cinnamon, bicarbonate of soda and salt and knead everything into a dough. Wrap it in cling film and chill it for 45 minutes.
  4. Roll the dough out 4 mm thick between baking paper, cut out 36 stars or gingerbread men and place them on a baking tray lined with baking paper.
  5. Bake the cookies in a preheated oven at 170 °C (150 °C fan) for 8 to 10 minutes, until the edges are lightly browned.
  6. Leave them to cool on a wire rack.

Good to know

These cookies are for anyone who finds Lebkuchen too mild. Fresh and ground ginger together give them a pleasant heat.

Swaps

Butter → coconut oil. Honey → maple syrup. Fresh ginger → 1 tsp more ground ginger. Spelt flour → plain flour.

Cooking tips

The dough is firm after chilling and softens quickly as you roll it, so roll it out in two portions. Honey cookies brown fast, so stay close to the oven for the last few minutes.

Storage

Keeps for 3 weeks in a cookie tin.

Allergens

Contains gluten (spelt), milk (butter) and egg; often too spicy for children – then leave out the fresh ginger.
