Ingredients

Method

You’ll need: oven · baking tray · chopping board · knife · grater

  1. Preheat the oven to 180 °C (160 °C fan) and get one or two baking trays ready. Wash the courgettes and slice them very thinly with a mandoline or knife.
  2. Lay the courgette slices side by side on the trays, overlapping them as little as possible. Brush with olive oil and season with salt and pepper.
  3. Grate the parmesan and scatter it over the courgette slices. Make sure every slice gets a little cheese.
  4. Bake the courgette crisps at 180 °C for 20–25 min until the parmesan is golden brown and the edges are drying slightly. Depending on your oven this can be a little quicker or slower, so check towards the end.
  5. Leave the crisps to cool on the tray after baking. That way they firm up and get more bite.
  6. To serve, carefully lift off the courgette crisps and eat them warm or at room temperature. They work well as a snack, a side or a topping for salad.

Good to know

When you want something salty and crunchy, these crisps are on the tray in no time. They're simple, savoury and best straight out of the oven.

Swaps

Parmesan → pecorino made from sheep's milk (similarly savoury, often a little stronger in flavour). Parmesan → mature Alpine cheese such as Gruyère (also provides protein and calcium). Olive oil → avocado oil (heat-stable and mild). Pepper → herbs such as thyme or oregano (more aroma, without extra heat).

Allergens

The recipe contains milk (parmesan). Usually fine for children if the crisps aren't too dark or too peppery; in pregnancy, hard cheese that's been heated through is generally fine.
