Ingredients
1 orange
20g honey
250ml milk
40g chia seeds
200g skyr
15g cocoa powder
Method
You’ll need: chopping board · knife · grater
Finely grate the orange zest from half the orange. Stir the cocoa powder and honey with 3 tbsp of the milk until smooth.
Stir in the rest of the milk, the orange zest and the chia seeds. Wait 10 minutes and stir once more.
Cover the pudding and chill it in the fridge for at least 4 hours or overnight.
Peel the orange with a knife and cut out the segments.
Layer the chia pudding and skyr in two glasses, top with the orange segments and serve.
Good to know
Chocolate and orange go just as well together in a chia pudding as they do in a cake. The skyr layer gives the dessert body without making it heavy.
Swaps
Milk → soya milk (contains soya). Skyr → Greek yoghurt (creamier, less protein). Honey → maple syrup. Orange → mandarins or clementines.
Cooking tips
Only grate the outer zest – the white pith underneath tastes bitter. Use an unwaxed orange for this.
Storage
Without the skyr and orange, it keeps for 3 days in the fridge.
Allergens
Contains milk; gluten-free, no egg or nuts. Suitable for children and in pregnancy; no honey for babies under one year old.
