Vegetarian chilli sin carne with soya mince
Vegetarian chilli sin carne with soya mince: a spicy one-pot recipe with kidney beans, sweetcorn, pepper and tomatoes. Plenty of protein, easy for every day and pleasantly filling.
Pour the hot vegetable stock over the soya mince and leave to soak for 10 min. Then drain well and squeeze lightly.
Chop the onion, garlic and pepper. Heat the olive oil in a large saucepan.
Fry the onion, garlic and soya mince until lightly browned. Add the pepper and cook briefly.
Sprinkle over the cumin, paprika and cocoa powder and toast everything briefly. This makes the flavours rounder and deeper.
Add the chopped tomatoes, kidney beans and sweetcorn to the pan. Simmer the chilli over a medium heat until thick, then season to taste with salt, pepper and a little chilli.
Serve the chilli hot, on its own or with rice or flatbread. Fresh herbs go well with it if you like.
Good to know
When it's grim outside, a pot like this is my favourite thing on the hob. Hearty, spicy and cooked without much effort.
Swaps
Kidney beans → black beans (similar fibre and minerals); sweetcorn → extra pepper or courgette (a bit more veg-focused, usually less sugar); soya mince → lentils (less processed, also with protein and fibre); olive oil → avocado oil (stable at high heat, a different flavour)
Allergens
Contains soya; depending on the stock, celery or other allergens may be included. For children, keep the heat mild; during pregnancy, the dish is usually fine if tinned food is handled cleanly and heated well.
