Ingredients

Method

You’ll need: oven · saucepan · baking dish · sieve · grater · wooden spoon

  1. Preheat the oven to 200 °C (180 °C fan) and grease the baking dish with butter. Get all the ingredients ready.
  2. Divide the cauliflower and broccoli into bite-sized florets and wash them thoroughly. Cook the veg briefly in lightly salted water until tender-crisp, then drain.
  3. Warm the cream with the water, salt and nutmeg in a small pan. Stir in some of the grated cheese until you have a creamy sauce.
  4. Spread the cauliflower and broccoli in the baking dish and pour the cheese sauce over the top. Sprinkle the rest of the cheese evenly on top.
  5. Bake at 200 °C for 20–25 min, until the top is golden brown and the sauce is bubbling slightly. Leave to rest briefly so it's easier to portion.
  6. Serve the vegetarian cauliflower bake with broccoli hot, straight from the dish. A green salad goes very well with it.

Good to know

A bake like this instantly makes the kitchen cosier. It's creamy, savoury and pleasantly simple. Just right when you want something warm and satisfying.

Swaps

Cream → crème fraîche (a little more protein, stronger flavour); grated cheese → vegetarian Alpine cheese (more flavour, often a little more calcium); butter → ghee (lower in lactose, good for high heat); broccoli → romanesco (similar nutrients, slightly milder flavour)

Allergens

The recipe contains milk and, depending on the cheese, lactose. Usually suitable for children if you go easy on the nutmeg, and no concern during pregnancy as long as you use pasteurised dairy products.
