Cut the broccoli florets off the stalk and chop them with a sharp knife into pieces the size of grains of rice. Crack the eggs into a large bowl, finely grate in the hard cheese and crush in the garlic. Add the chopped broccoli and the oats to the egg mixture and stir everything into a batter. Leave the mixture to stand for 5 minutes so the oats absorb the liquid. Heat the olive oil in a frying pan, add small spoonfuls of the mixture, press them flat and fry the fritters on both sides until crisp. Good to know Frying raw broccoli gives these fritters an amazing texture. The melted cheese holds everything together really well.
Swaps Hard cheese → Emmental (if you'd like the fritter batter a little milder but melting a touch more).
Cooking tips Press the fritters firmly down into the pan with a spatula. The more compact they are, the less they'll fall apart when you turn them.
Storage The fritters are great for taking to work. They still taste really good cold the next day.
