Vegetarian bread dumpling hash with Brussels sprouts and fried egg
Vegetarian dumpling hash made from leftover bread dumplings from the festive meal, fried with Brussels sprouts, onion and marjoram and topped with fried eggs. A lunch from Christmas leftovers in 25 minutes.
Cut the dumplings into 1 cm slices. Trim and halve the Brussels sprouts and cook them in salted water for 5 minutes. Dice the onion.
Fry the dumpling slices in the olive oil over a medium heat for 6 minutes until browned on both sides.
Add the onion and Brussels sprouts, fry everything for another 5 minutes and season with marjoram, salt and pepper.
In a second frying pan, fry four eggs in the butter until the egg whites have set.
Chop the parsley, divide the hash between two plates, top each with two fried eggs and scatter over the parsley.
Good to know
On Boxing Day, there are often dumplings from the festive meal left in the fridge. Fried in slices, they turn crisp on the outside, and with Brussels sprouts and fried eggs they become lunch. That way, nothing ends up in the bin.
