Ingredients
200g butter
90g coconut sugar
1 egg
250g spelt flour
120g ground almonds
30g coconut oil
2 tbsp honey
1 tsp vanilla extract
40g cocoa powder
1 tsp cinnamon
1 pinch of salt
Method
You’ll need: oven · baking tray
Beat the soft butter with the coconut sugar for 3 minutes until creamy, then beat in the egg and vanilla extract.
Mix the spelt flour, almonds, half the cocoa, the cinnamon and salt, knead everything into a soft dough and chill it for 30 minutes.
Preheat the oven to 180 °C (160 °C fan). Press walnut-sized pieces into a bear paw or shell mould and turn them out onto a baking tray lined with baking paper.
Bake the cookies one tray at a time at 180 °C for 10 to 12 minutes each, until firm at the edges. Leave them to cool on a wire rack.
Melt the coconut oil and stir in the remaining cocoa and the honey until the glaze is glossy.
Dip the tips of the bear paws in the glaze and leave them to set in the fridge for 20 minutes.
Good to know
Bear paws are the ridged cookies that look like a paw. With a shell mould they're quick to shape, and a fork works too. Almonds, cocoa and a hint of cinnamon make the dough short and chocolatey.
Swaps
Almonds → ground hazelnuts. Spelt flour → plain flour. Butter → ghee. Coconut sugar → date sugar.
Cooking tips
Dust the mould with a little cocoa before each cookie, so the dough comes out more easily. Without a mould, press oval rounds flat and draw ridges into them with a fork.
Storage
Keeps for 3 weeks in a tin stored somewhere cool.
Allergens
Contains gluten (spelt), milk (butter), egg and almonds. Because of the honey in the glaze, not suitable for children under 1 year.
