- 2 blocks of feta
- 500g cherry tomatoes
- 2 cloves of garlic
- 3 tbsp olive oil
- 1 tsp thyme
Method
You’ll need: oven · baking dish · chopping board · knife
- Preheat the oven to 200 °C (180 °C fan). Wash the cherry tomatoes and put them whole into a large, shallow baking dish.
- Peel the garlic, halve the cloves and add them to the tomatoes in the dish.
- Place both blocks of feta in the middle of the dish, so they're surrounded by the cherry tomatoes.
- Pour the olive oil generously over the cheese and veg and sprinkle with the thyme.
- Bake everything in the oven for 25 min, until the tomatoes burst and the feta is deeply browned on top and soft.
Good to know
This viral bake needs just a few ingredients and practically makes itself in the oven. The baked feta turns incomparably creamy.
Swaps
Feta → soft goat's cheese (if you don't like the strong sheep's cheese flavour – goat's cheese melts even more runny).
Cooking tips
Don't cut into the feta before baking. The crust keeps it juicy. Only stir it in once it comes out of the oven.
Storage
Leftovers are great blended and used over the next few days as a cold, really flavourful spread.
